Amy Chirico is a pediatric critical care medicine doctor in northern New Jersey where she lives with her husband and two toddler daughters. Her weight struggles began at an early age and she spent years yo-yo dieting and searching for a sustainable plan to lose and maintain her weight. She feels that keto, along with active work on her mindset and perspective, are the solutions for which she’s been searching all along and have benefited her in so many ways beyond weight loss. Her goals now include spreading the word about the benefits and myths about keto to her colleagues in the medical community, her patients and their families when possible, and anyone else who will listen, and providing support to others getting started or maintaining their keto way of eating.

Daisy’s latest extraordinary woman, Sandra, talks about how she has overcome numerous chronic health issues with keto as well as helping her father do the same and steer her children through gastric health disorders.

Sandra Toll, also known as KetoCubana, is a wife and mother of two, who teaches Theatre at an urban arts high school in New Jersey. After a lifetime of struggling with weight, PCOS, infertility, insulin resistance, migraines, chronic fatigue, sleep apnea, and chronic pain, Sandra has found a new lease of life in a ketogenic dietary lifestyle. In Spring of 2016, she devoured the works of greats such as Mark Sisson, Nora Gedgaudas, Gary Taubes, Nina Teischolz, Maria Emmerich, Jimmy Moore, the 2KetoDudes and many more. Six months after starting keto, she had lost 60 pounds and had reversed many chronic health issues. Now keto for two and a half years, she has successfully coached friends and family members through a gentle and gradual transition from the S.A.D. to a low-carb/ketogenic approach, connecting them to resources for support.  This all primed her to address her children’s autoimmune and allergy issues through nutrition. As a teacher, Sandra’s strength is in sharing nutritional information with her community. She has discovered a growing passion and interest in the nutritional needs of children and nutrition for disease prevention. Sandra hopes to become a Nutritional Therapy Practitioner in order to further address the nutritional needs in her community.

Daisy’s latest extraordinary women, Katie & Vicky, talk about what it’s like to be new to keto, what they have learned so far and the benefits they are already reaping.

Katie Kelleher is a 34 year old from California who works in a job that every nerd girl dreams of. She’s suffered from body positivity issues most of her life, but she’s trying to turn that around and has even started her Curvy Girl Complications blog to bring to light both the humorous and serious issues of being a Curvy Girl. 

A self-proclaimed, prior sugar fiend, she realized something had to be done when sugar and carbs were making her sick. She heard of keto from a fellow volunteer for GreySave Greyhound adoptions and hasn’t looked back since. She and her boyfriend have both been keto since the end of April 2018. She has been blogging about their experiences since day 1.  

Vicky Brown is a 39 year old Canadian married mother of one living in Japan. As an elementary school teacher she needs as much energy as possible to keep up with her very energetic kids, not to mention her own 2 year old. 

After years of dieting, weight loss groups (such as Weight Watchers), vegetarian, finding out about slow carb, paleo, then primal which led her to hearing about low carb, she finally started “lazy” keto in April of 2018 together with intermittent fasting. 

She has lost about 5 kg, but regained 3 when she went back to America to visit family. Usually she gains much than 3 kilos so this is a bit of a NSV!

Her goals for starting keto are health related. She is currently fighting off a future type 2 diabetes diagnosis but losing weight is a nice bonus.

Miriam Hatoum, also known as “Granny Keto, is a wife, mother, and grandmother of two – and also a lifelong dieter. For years she was scolded by doctors and was never believed when she said she was following dietary advice – a horrible cycle that started when she was just 13 years old!  Listening to Gary Taubes’ Why We Get Fat and What To Do About It was her lightbulb moment when, for the first time, she realized that the food itself was keeping her fat all these years and that it was not her fault.
