Daisy’s latest extraordinary women, Liz & Brenda, talk about their exciting biking expedition across America to Ketofest last summer.

Liz is a 43 year old computer nerd who has been obese her entire life. She had gastric bypass surgery in 2003, but experienced weight creep over the years. In late 2014 she was diagnosed with Lipedema, which led her to concentrate on losing weight with little success. She went full keto in March 2017.

She lives with her amazingly supportive husband, two dogs and a parrot.

Liz spends most of her free time being unladylike, riding an overgrown dirtbike or snowmobiles.  Between seasons she can be found in the shed, surrounded by tools and bits of motorcycles.
She particularly enjoys making men uncomfortable when they ask when she’s going to get a real bike, or give her unsolicited advice on tire pressure.

Brenda has 4 years invested in the ketogenic and fasting communities, and has guided many to better health.

She cured her own T2DM with a combination of a ketogenic diet and fasting and it has become her lifelong ambition to help others recover from diabetes and obesity. She has recently started working as a nutritional educator with Dr Jason Fung and Megan Ramos’s Intensive Dietary Management program.

Her story has appeared on The Diet Doctor site, and she has been a guest on numerous ketogenic lifestyle podcasts including 2KetoDudes and The Obesity Code.

Brenda describes herself as a low carb cooking expert, weight lifter (she can leg press 810 lbs!), motorcycle enthusiast and a bold mix of adventure and dedication.

Brenda notes that sometimes these trips inspire women to get a bike of their own. When they approach her she always recommend they take The Motorcycle Safety Foundation course for training. She took the course herself as a refresher, even though she have been riding bikes since age 9. She learned valuable skills there. Liz agrees that it is an excellent program. Daisy’s latest extraordinary woman, Kim, talks about her education and travels that ended up at a low carb conference in San Diego and signing on with the world’s leading LCHF website – Diet Doctor.

Kim discovered low carb around 5 years ago after experimenting with various ways of eating, including juice “fasts” and vegan diets! The fantastic energy levels and disappearance of cravings convinced her that low carb was a lifestyle that could really benefit her health long term. She studied an MSc in International Development with a specialisation in food security and nutrition in 2014-2015 and moved to Bolivia to work with food provision systems and poverty reduction. However, she continued to research low carb diets passionately and, noticing the lack of good information on low carb in Spanish, she set up a blog to translate information for Spanish-speaking people.

In August 2017 she attended Low Carb USA in San Diego, where Andreas Eenfeldt mentioned during his presentation that he was looking for someone to launch Diet Doctor in Spanish. She applied for the position, got the job, and in October 2017 made a move to Stockholm, Sweden to take up a position as head of the Spanish Diet Doctor site. She now continues to run the site and also works as an editor and writer on the English site, DietDoctor.com. Kim is really happy to now be working full time on what has been a real passion for several years, helping other people change their lives with low carb, too.

Daisy’s latest extraordinary woman, Nina, talks about her international bestseller The Big Fat Surprise and how women and children in particular have been impacted by the US national dietary guidelines.

Nina Teicholz is an investigative science journalist and author. Her international bestseller, The Big Fat Surprise has upended the conventional wisdom on dietary fat–especially saturated fat– and challenged the very core of our nutrition policy.

The executive editor of “The Lancet” wrote, “this is a disquieting book about scientific incompetence, evangelical ambition, and ruthless silencing of dissent that has shaped our lives for decades…researchers, clinicians, and health policy advisors should read this provocative book.” A review in the American Journal of Clinical Nutrition said, “This book should be read by every scientist…[and] every nutritional science professional.” In the BMJ (British Medical Journal), the journal’s former editor wrote, “Teicholz has done a remarkable job in analysing [the] weak science, strong personalities, vested interests, and political expediency” of nutrition science.

The Big Fat Surprise was named a 2014 *Best Book* by The Economist, the Wall Street Journal, Forbes, Mother Jones, and Library Journal.

Teicholz’s writing has also been published in The BMJ, The New York Times, The Wall Street Journal, The Atlantic, The Independent, and The New Yorker, among others. In addition, Teicholz is the Executive Director of The Nutrition Coalition, a non-profit group that promotes evidence-based nutrition policy. She has testified before the Canadian Senate and U.S. Department of Agriculture about the need for reform of dietary guidelines.

Teicholz attended Yale and Stanford where she studied biology and majored in American Studies. She has a master’s degree from Oxford University and served as associate director of the Center for Globalization and Sustainable Development at Columbia University.

A former vegetarian of 25+ years, from Berkeley, CA, Teicholz now lives in New York city with her husband and two sons.

Daisy’s latest extraordinary woman, Pamela, shares her passion for wine and cheese.

Pamela has been keto for about a year. In that time, she has lost about 40 lbs and gone from a size 20 to a size 12 pants, extra large shirts to a medium. Her asthma and hypoglycemia are gone and she has even done a 72 hour fast.

Daisy’s latest extraordinary woman, Jeanne, talks about how she has recently started the ketogenic diet and how she has found the first few months.

Jeanne is a 48 year old photographer who has a day job at a local college in the workforce education department doing marketing, social media, and training for her department. She has a wonderful husband of 11 years and together they’ve rescued 7 cats, 4 cockatiels, a squirrel, and 2 parakeets, of which 5 of the cats and the 2 parakeets remain. She was raised in the dairy farm countryside of upstate New York, and moved down to Florida when she was 12. Having had weight gain since the age of 6, she has struggled with her health and weight most of her life. After many failed diets, a diagnosis of type II diabetes 12 years ago, and a roller coaster ride with more failed diets, she feels that she has finally come across the answers to her prayers in finding the Keto way of life. She is new to the Keto way of eating, just a couple of months in, but she is singleminded in her efforts to reverse her diabetes and become healthy again.

With over 15 years of professional culinary experience, she has cooked and taught many culinary styles with a special interest in food for health and culinary traditions. Daisy’s latest extraordinary woman, Carol, talks about running marathons using intervals and heart rate training.

Carol is a 54 year old mother of two daughters, wife of 32 years and owns and runs a hearing clinic. She loves to run marathons and has even run through Disney World doing their marathon. She has lost 50 ponds, after starting keto a couple of years ago, and has noticed a big improvement in her running and recovery as well as knee pain, blood pressure and GI issues. Carol uses the Maffetone and Galloway methods for running and has found they greatly improve her ability and enjoyment of running.
