Megan Ramos is a clinical educator and co-founder of The Fasting Method along with Dr. Jason Fung.  She’s an expert on therapeutic fasting and low carbohydrate diets, having guided more than 14,000 people worldwide.

She is the co-author of the New York Times Bestseller Life in the Fasting Lane.  

Megan was diagnosed with non-alcoholic fatty liver disease (NALFD) at age 12, polycystic ovarian syndrome (PCOS) at age 14, and type 2 diabetes (DMII) at age 27. She reversed these metabolic conditions and achieved an 86-pound weight loss by incorporating intermittent fasting with a low-carb diet, and is now passionate about helping others do the same

Daisy’s latest extraordinary men, Matt and Jon, return for Part 2 to chat about keto and their skincare products business NaturesJAM. 

Matt Murray

Matt is 48 and lives in Delaware, which on the East Coast of the US.  He has been married for 20 years and has 3 teenage daughters, a dog and a cat. 

Matt started keto four years ago after being diagnosed with T2 Diabetes and metabolic syndrome.  Through diet and other lifestyle changes Matt was able to return his health and weight to normal.  Matt recently started a skin care company called Nature’s JAM with his friend Jon Slaughter that makes all natural, small batch skin care products.

Jon Slaughter lives in a town on the mid-Atlantic seaboard of the United States near the Chesapeake Bay.

Jon stumbled upon the paleo diet while looking online for a recipe for a party.  After following a paleo diet for over a year, he learned about the ketogenic way of eating from a friend who had been diagnosed with T2 diabetes.  A proponent of natural remedies, Jon’s philosophy is “Do what you can first” instead of immediately going down the path of pharmaceuticals.

Jon loves to cook and create delicious recipes that are simple.  He has shared his keto experience and recipes with family, friends, and anyone else who wants more information.  He likes creating simple recipes that anyone can make because he believes living a ketogenic lifestyle will make for a happier planet one person at a time.

Jon’s other hobbies include hiking, kayaking, and homesteading.  He keeps a brood of hens as a source for fresh eggs, landscapes with edible and medicinal plants, makes medicinal tinctures and herbal tea blends, and makes his own personal care products such as face cream and hand salve.  

Jon partnered with his best friend, Matt, to turn his hobby of making natural skin care products into a business.  Together they launched nature’s JAMTM making handmade, all natural skin care products in small batches.  “When someone uses one of our products, I not only want them to love how it makes their skin look and feel, I want the aroma to lift the person up and make them feel good.”

This is Jon’s as he sent it to me.

It’s actually a recipe I found for bagels, but I use it for pizza crust, rolls (hamburger/sandwich, dinner, and hotdog), and bread sticks (using a garlic-herb cream cheese makes them especially tasty).  

  • 2 cups shredded mozzarella
  • 2 oz (57g) cream cheese
  • 1.5 cups almond flour
  • 2 Tablespoons baking powder
  • 2 eggs – beaten. 

I like to get the three components (cheeses – dry ingredients – eggs) all prepped before I start the process.  

Put the mozzarella in a good sized microwave safe bowl along with the cream cheese (I cut it into smaller chunks instead of one big one).  

In a smaller bowl, whisk together the almond flour and baking powder.  

In a third bowl, beat the eggs.  

Microwave the cheese for 2 minutes.  Stir until it’s all mixed together.  

Add the dry ingredients and fold into the cheese with your hands (the cheese may still be hot, so careful).  

Once the dry ingredients are combined in, knead the dough to get it well blended and consistent distribution of almond flour.  

Now time to add the eggs and knead them in (this is where the dough gets sticky).  Once the eggs are combined, I use a spatula to form a ball and put that on a sheet of plastic wrap. I form a skin around the dough ball with the plastic wrap and then refrigerate for at least an hour to make the dough easier to work with).  

Once you take it out, divide according to what you’re making.   divide by 6 for bagels, and hamburger/hotdog rolls, 8 for dinner rolls, and it depends on the pizza size for the division (1 long sheet pan pizza or 2 9″ round pizzas).  The shape of the dough isn’t going to change, so if you want rolls wide enough for your burger, you have to shape it that way.  

I use the same temp for everything though.  425 degrees F (218 C). 10-15 minutes is about how long it takes.  Basically, I go by sight.  When the tops looks slightly browned and delicious.

Daisy’s latest extraordinary woman, Valeria, returns to talk more about how keto has helped with her lipedema and the charity she founded to help others. She also talks about how the current Covid-19 pandemic is impacting her where she lives in Rome, Italy.

Valeria Giordano is a 42 year old Italian who lives with her husband and 8 cats.

She is a language teacher at school and university and a professional audiovisual translator. She has just resumed her long suspended PhD studies after a serious medical condition. Becoming a disabled herself she started an independent research in media accessibility and teaching language and translation online by modular distance learning.

She talks about her long struggle with ovarian cancer and with lipedema which led to super obesity and mobility issues and the difficulties connected with the current situation with coronavirus.

Valeria suffered from restrictive eating disorders all her life, at least since lipedema symptoms appeared on her body after puberty to change it for good. Her main concern in life was to achieve an illusory ideal of perfection by which she would have controlled her crazy body.

In 2012 she had a personal apocalypse and her body was totally turned into someone else’s. For apparent no reason she started bleeding and bloating and she gained more than 100 chilos within a year and a half. She was so desperate and miserable and no doctor was able to find out what was happening to her. She underwent bariatric surgery (RNY gastric bypass) and lost about 50 chilos, maily in the upper part of her body. Ovarian cancer and endometriosis were discovered soon after.

After the first cancer surgery and chemo the situation seemed to improve, but only for a short time.

The pain in the legs, arms and bottom became excruciating, starting to affect her mobility. She was compelled to walk with crutches and she gradually ended up on a wheelchair. She was giving up all the cures, tired of being dismissed from doctors who were unable to understand what was going on in her body and with her hormones.

The breakthrough came in 2016 when she was eventually diagnosed with advanced lipedema and hypermobility disorder. She came across international websites like Lipedema Project, FDRS society etc and she spent months in binge reading everything about lipedema. All the unanswered questions found an explanation and every sufferings and pain had a reason. She decided to turn this pain into strength and with the help of some other lipedema patients she founded LIO, the Italian charity association for lipedema sufferers. She is the current LIO president and legal representative.

LIO Lipedema Italia Onlus is a charity organization founded in 2018 by women with Lipedema. Our focus is on supporting patients, educating doctors, health professionals and the public about Lipedema and its symptoms, so it may be diagnosed and treated earlier. Our belief is that with earlier diagnosis and treatment women can prevent developing further complications and manage their Lipedema. In Italy Lipedema is frequently mistaken for obesity or lymphoedema, so that many women don’t get appropriate advice or treatment. Also lipedema surgery and keto woe are generally discouraged because of a lack of proper education and awareness.

Valeria experienced keto and had amazing results in terms of volume reduction and relief of symptoms, especially pain. But many doctors discouraged keto and then she found herself messed up again with ovarian cancer who decided to come back and ruin all the lipedema cure plans.

She ended up again on a wheelchair but didn’t want to give up again. Soon after the end of chemo she was accepted into a lipedema surgery path and she eventually started her rebirth by swimming, dieting, compression and liposuction.

Darren is a 51 year old Australian who lives in Melbourne.  He started his keto transformation towards the end of 2015 after breaking the scales at his dermatologist’s office. He had high blood pressure, was on 6 different medications and struggled to walk 200 metres. His psoriasis was so bad that he had to take several shirts to work to keep changing because of the bleeding. 

The dermatologist wanted him to have bariatric surgery and, when he was offered an appointment a few days later, he decided then and there to go it alone. Remembering a conversation he had had with a friend about LCHF, he ditched the carbs and sugar. He and his wife got started on the Diet Doctor’s 2 week meal plan and the rest is history. 

Darren has dropped over 200 pounds and the medications along with them. He rediscovered his love for cycling and running and now does all sorts of exercise to boost his mental health. He says you first have to fix what’s above the mouth to control what goes in the mouth and he takes his wellbeing very seriously. He loves exercise for how it makes him feel and says that he exercises because he lost weight rather than exercising to lose weight.

Darren’s biggest motivation now is helping others achieve health and wellbeing just like he did.
