#146: Sarah Hung – The Joys of Keto!

Daisy’s latest extraordinary woman, Sarah, talks about how she loves keto and keto food, and how it has given her back control over cravings.

Sarah Hung has been on a low carb and ketogenic diet for nearly four years and has never been happier with her diet and health.

She was first accredited as an International Board Certified Lactation Consultant in 2001. She ran a private practice called Lotus Lactation in Hong Kong for several years, and previously worked on the Maternity Ward of the Matilda International Hospital in Hong Kong. Once upon a time she was a mathematician and a transport planner…

Sarah trained in the community with La Leche League and was accredited as a Leader in July 1995 at the 14th International Conference of LLLI in Chicago. She has been helping mothers with breastfeeding problems (in person, over the telephone and via email) and leading LLL meetings in Hong Kong ever since.

Sarah has four children all of whom were breastfed.

Daisy’s latest extraordinary woman, Nobuhle, talks about how she overcame cancer and lives with lipedema, lymphedema and hyperthyroidism.

Sharon “Nobuhle” Williams has been a licensed evangelist since 2003 through the Pentecostal Assemblies of the World, and founder of Global Growth Ministries (GGM), an organization dedicated to, spiritual growth and development. 

Her fourth journey to South Africa resulted in a six-year stay there as a missionary with pastoral oversight which gave GGM a global presence. She holds an MBA in Management Information Systems along with over 20 years of progressive business experience primarily in the telecommunications industry.

After her diagnosis in December, 2018 of stage 4 Lipedema “with a component of Lymphedema” Nobuhle sought traditional treatment which began in Mid-march of 2019. It initially consisted of MLD, wrapping, and low carb eating. Within just 2 weeks she noticed that her pain had all but diminished  After becoming a part of the Masterclass hosted by Lipedema Simplified, she switched to a KETO way of eating, began swimming, using a pneumatic pump..  +90lbs lighter, Nobuhle has, and still is, in the process of collecting a small arsenal of tips, tricks, and hacks  to help further her goal of living a physically “fit”, i.e., healthy lifestyle.

Daisy’s latest extraordinary woman, Megan, talks about her work as a clinical nutritionist and especially how she helps women with lipedema.

Megan Pfeffer is an Australian based Clinical Nutritionist with a health science degree in nutritional & dietetic medicine. Megan is the founder of I Choose Health, an international online nutrition consulting practice. Specialising in food intolerances and therapeutic carbohydrate reduction and keto nutrition for lipedema, lymphedema, type 2 diabetes and obesity, Megan helps women to take back control of their health.

I Choose Health offers nutrition education, public speaking, nutrition consultations, 2 hour workshops and 8 week keto courses with live, interactive weekly sessions and guest speakers. Megan shares her experience and expertise while providing support and motivation for achievable, long-term dietary and lifestyle changes.

Megan follows a ketogenic diet to manage her own health, including weight loss of nearly 20 kg’s (44 pounds). Megan discovered she has lipedema in early 2019 and breast cancer in 2020, and credits fasting and keto for helping her manage and overcome these conditions.

Megan has presented at numerous international conferences in New York, Boston and Italy, and is the lead author of the 2019 cookbook for lipedema ‘From Our Coaches’ Kitchens: Ketolicious for Lipedema Holiday Cookbook’. She co-authored 2019 research paper titled ‘Ketogenic diet as a potential intervention for lipedema’ published in the peer reviewed medical journal ‘Medical Hypotheses’.

Leslyn Keith, OTD, CLT-LANA, has a Clinical Doctorate in Occupational Therapy with an emphasis on lymphedema and obesity.

Dr. Keith has started four lymphedema therapy programs in California including two in private practice. In addition to treating lymphedema and other lymphatic disorders, she currently researches, consults, and lectures on lymphedema, lipedema, and obesity nationally. 

She is Director of Research and Board President for The Lipedema Project and an instructor for Klose Training and Consulting, an organization that trains therapists to treat lymphatic and fat disorders.

Catherine Seo, PhD is Founder & Director of Lipedema Simplified and Executive Director of The Lipedema Project, course director for MasterClass: Beyond Lipedema and a professor of psychology.

She produced and directed the documentary, The Disease They Call FAT, and was one of the co-authors of the book, Lipedema-The Disease They Call FAT: An Overview for Clinicians.

Catherine’s research focuses on empowering women who experience the distortions of body image and the role of nutrition for treating lipedema. She holds a doctorate in Psychology with a concentration in Media.

Daisy’s latest extraordinary women, Jill and Chris, talk about how their shared love for exercise and the community they have built for women over 50 – Becoming Elli. They also have a podcast called Fit, Strong Women Over 50.

Jill McCauslin and Chris Brown both hit their fifties, lost weight, became fit, and discovered that running and lifting weights can be a lot of fun. They got fit in their fifties and plan to stay fit and get strong well into their sixties and beyond.

Jill and Chris decided to create an online community called Becoming Elli, dedicated to becoming and staying fit by gaining strength and having fun at the same time. They want to investigate different ideas about fitness, food, and general health. 

Their friendship became a great way to have a buddy for running and discussing nutrition and comparing gym workouts. One day they were discussing their future plans and discovered that they both wanted to start a blog/podcast/community for women like themselves and from that conversation, Becoming Elli was born.

Becoming Elli is dedicated to women becoming strong and fit in the second half of life.

They are “becoming”, because it is a never-ending process of getting and staying fit and strong. You’ve probably never heard of Elli before, but she is the Norse Goddess of Aging who surprised everyone when she was challenged to a wrestling match with Thor… and WON.

Jill and Chris named their community “Becoming Elli” because they know that there is a whole group of women over 50, who are working together to become and stay fit and strong. 

That’s about the extent of their knowledge of Elli and nobody seems to be making a super-hero movie about her. But they are inspired by Elli and think we can become like her: surprisingly strong as we age.
